我喜歡的Brunello di Montalcino (23/11/2011)

今年10月份,又到Tuscany找尋Brunello及Chianti,碰巧Consorzio del Vino Brunello di Montalcino在Florence有一場Brunello的試酒會,有28個Brunello酒莊參加分別是:

Argiano; Banfi; Barbi; Camigiliano; Campogiovanni; Capanna; Caparso; Castelgiocondo; Col d'Orcia; Collemattoni; Donatella Cinelli Colombini; Fanti; Ferrero; Il Cocco; La Poderina; La Togata; Mastrojanni; Pian Delle Querci; Pian Delle Vigne; Pietroso; Podere San Giacomo; San Lorenzo; San Polo; San Carlo, Tenuta La Fuga; Tenuta Le Potazzine; Tenute Silvio Nardi; Terre Nere.

Montalcino東、南、西、北都有代表,好!一個好的機會在短時間內品嚐到十分之一的Brunello(現時Montalcino,大概有250個 酒莊生產Brunello di Montalcino 及Rosso di Montalcino)!

試酒會在Florence舊橋附近的Hotel St. Regis舉行,場面熱鬧,我帶著興奮的心情開始喝酒!但試了5個酒莊以後,我興奮的心情很快就見底了!我開始明白心無罣礙所說的"好的Brunello 難找"或者"是'好喝'的Brunello雖然俯拾皆是,感人的Brunello卻不容易找的說法"。

原因是: 試酒會上,大部分的Brunello和Rosso,我只感受到兩種氣味,一是木桶,第二是甜的味道!喝下去,也是以木桶和甜味為主導(其實不是真的甜,只 是酸度不夠,對比下,我們才會覺得甜)!究竟Brunello的味道,氣息,傳統去了哪兒!我想,要喝oaky和fruity的酒,去找法國和美國的酒不 就行了吧!老實說,這次的Brunello試酒會讓我挺失望的!

我喜歡的Brunello應該是有4大支柱:酸度、立體的果味、泥土和礦物的氣息及細緻而有力量的質感!

(1) 酸度: 我這一次去了一些Northern Montalcino 的酒莊看看,其中一個酒莊就是Il Marroneto,莊主Alessandro跟我說他十分滿意2011的Sangiovese (2011的Harvest對義大利來說是個艱難的年分,收成比正常少了60%),然後他什麼也沒有說,就從Fermentation的大木桶中盛了一些 2011 Brunello Madonna delle Grazie(他的Flagship Brunello)給我品嚐。他一直看著我看,然後我說“Buono,the acidity is beautiful”, 他笑了!然後我又試了他的 Brunello Normale,果熟了許多,偏甜!你可以看到他最好的Sangiovese已經留給他的Madonna delle Grazie!

在一遍講Brunello的文章,Alessandro 有這樣的看法:
“what made Brunello famous all over the world is its elegance and its capacity to evolve for years, thanks to its fresh acidity. But now there are Brunellos that are unnaturally flat and lifeless and will not age well. Elegance has been replaced by explosive fruit sensations and excessive alcohol”


 在Salicutti,另一間出名的Brunello酒莊(在Montalcino的東南部),我跟莊主Francesco談論到 acidity的問題, Francesco以前是化學教授,他說100%的acidiy是幾百年也不會變質的!哈哈,我們喝的是Brunello,而不是濃硫酸吧!這正好帶出除 了acidity, Brunello還有其他的元素!

(2) 立體的果感: 立體果感可以在Joseph Bastianich & David Lynch 在 Vino Italiano – The Regional Wines of Italy一書對Sangiovese (Chianti和Brunello)的描述體會得到“……has a foresty, smoky quality, drinking it is like eating berries in the woods, the spicy scents of the underbrush mingling with the sweetness of the fruit! 立體的果不代表fruity,它是可以讓你感受果的存在,好像正在吃一顆一顆新鮮、半熟、熟透的Cherry,berries和其他水果一樣,酸甜交融!

(3) 泥土和礦物的氣息:已經有很多解讀,當然,一般情況下,在Brunello你會比較容易找到野菌、菇類、泥土、鐵和生銹的味道,但對我來說最重要就 是收結那份甘甜的味道,甘甘甜甜的味道就是礦物跟葡萄的perfect match!種得好的Sangiovese Grosso才有這份感覺!

(4) 細緻而有力量的質感 - Brunello 應該是優雅、細緻的,無論從顏色(Garnet Red),或是Body(medium)已經讓你有初步的體會。喝下去的話,第一個感覺是輕輕的,然後複雜的味道會一層層在你的口裡綻放,她不會很著急的 去表現自己,還是秀雅和悠然的;不過,她是有力量,有張力的!

希望愛酒的朋友,日後能在香港和大陸找到多些尊重傳統和用心釀造的Brunello di Montalcino!
